Oh boy.... It's such a hard battle both Emotionally and financially. 

I'm not a lawyer, but family law isn't that hard. There's lots of literature and free legal advice out there. No one has committed any crimes so there is no real law being broken. It all comes down to what's in the best interest of the child. Word everything with that as a start or end to your statements. Make sure it is in the best interest of the children or it will get thrown back at you with repercussions (ie. Don't waste the courts time). 

In this situation I would say there is undue hardship. Trying to live on $600 every two weeks in any province is criminal. This is not good for anyone. I would represent myself and state that this is preventing you from being the parent you need to be for the children. If you can't live then it makes it VERY hard to be a parent. The children should be having the same living standard as the other parent provides. This is in the best interest of the children. 

Since the papers are already signed before the DNA test, it might be very hard to reverse the decision. DNA test should have been done before signing ANY papers. 
Everyone says document everything, take pictures.... On and on. Who wants to live like that. I document denied visits, my visits themselves, and any denied access to school, medical records and if my boy gets hurt by accident on my dime. Unless of course there is obviously abuse going on. I would keep track of that and politely tell child services. 
Focus on being the best for your children (no matter what). Don't lower yourself to her level. 

Based on denied visits, with proof, should not be hard to get enforcement on the parenting order. Make a years worth of visitation schedule. Pick up and drop off times, locations..... Make sure the times do not interfere with school and Mother's Day. DO NOT miss the visits or be late. I travel 1285km and have only been late a couple times in 8 years due to accidents. I will leave an hour or so of extra time and bring my boy to the park or swimming just to avoid being late. 

Dress nice for courts (dress pants, collar shirt, tie...). Speak ONLY when the judge asks you a question or your side. DO not make facial gestures and remain calm at all times. 
Try not to say anything bad about the Mom. It's hard, but your there for your child's best interest. Bad mouthing Mom is not good for the children. 
This has worked for me so far (7 court visits in 8 years). 

I hired a lawyer once, but found I got more results representing myself. 
KEY WORDS ARE: what's in the best interest of the child... Having a relationship with their father is in the best interest.
